I use an SE Aqua Salt, and it works perfectly. I love being able to put it in the dishwasher without any worry. If you’re buying multiple steak knives, though, I’d go with the SE Z-Cuts.

Rex45 and K390 are the most stable steels of any I’ve used so far. Light impacts or slicing cuts against hard surfaces rarely cause any chipping, rolling, or loss of sharpness in these steel in my experience. K390 in particular is also exceptionally wear resistant and will easily maintain sharpness ...

I have a wicked edge 2017 gen 3 pro, and I find convexing to be extremely easy on it. I apply diamond lapping films to balsa strops and sharpen like I normally would with the WE diamond plates. Jende has the best lapping films for this because they have grits starting as low as 180g up to .5 microns...

I’ve had occasional chipping, though not more than other steels with similar carbide volumes and hrc. S110v is the only steel I’ve had a knife snap in half from a 2’ drop onto concrete when the knife was closed and didn’t land on the blade, though. Happened with a blurple manix 2.

While I slightly prefer g10 to frn/frcp, I don’t like liners on any knives that don’t require them for the lock. The extra weight doesn’t really bother me, but liners don’t really add any benefits while creating space for hidden but pervasive rust to creep into the pivot. I’ll take linerless g10 all...

The only time I use a knife smaller than the shaman is when I need to not cut too deeply into something. In those circumstances a shorter edge is usually better.
