Which is better steal, the AUS-10 or the CPM 440V? I have a Native with the 440V steel but would like to get a SS Native with the AUS-10. What is the difference? Is one better than the other?

If edge retention is important for you, then yes, the 440--V steel will have much better edge retention. Quite likely has better corrosion resistance as well. It may be a tad more brittle, but shouldn't be at the Rc Spyderco is using.
If you aren't going to use the second knife heavily, might as well get it and enjoy!
