How does one properly put scratch patterns on the edge? Thank you.

I'm not sure that I understand your question correctly, do you mean the micro-serrations made during sharpening a plain edge? The latter happen automatically as long as the edge is moved in a direction roughly at right angles to the stone. The coarser the stone the larger the micro-serrations. Using an ultra fine stone or stropping will polish the edge and make the edge better for push cuts but not so useful for slicing. Hope this helps.
