I have to create a business proposal for school and i am doing mine on a knife shop so i need to know how much the average knife shop owner makes asap

it depends on what they deal in.
Cutting Edge (here in S'toon, Sask, Canada) makes about $500-$800 profit/day...
swords, autos(MicroTech LCC D/A, butterfly), martial arts(stars, sais), and bootknives are some extras they dabble in.
We all start with 10 fingers. Those with Spydies have 9 to spare, Still need a thumb. Good thing I still have 8 to spare...

Welcome Prophet. Few people with the moxy and drive to create a successful business are likely to perceive themselves as average. Might be hard to get any to answer a question phrased that way.
I would guess that you might possibly be able to persuade a dealer to let you know the # of knives moved in a particular fiscal period. Few are likely to share the exact level of profit they are attempting to make on their standard prices.
I doubt many of them are off on cruises around the world at any point in time. I would guess that the number making a comfortable living for a family of 4 is likely to be small. Course, people's definition of that is likely to vary widely also. Statistically, under 20% of small business ventures succeed. Are you going to include those who go bellywhompers in your average?
Am afraid the only way for you to get the answer to your question is to simply ask shop owners. The tricky part will be to persuade any of them to talk to you.
There appear to be Excalibur franchises available for placing a business in a mall. It might be that company could give you some very optimistic expectation figures if you sounded interested in buying a franchise.
