Maybe this has been addressed before, but here goes.
I have a Salt-1 H-1 steel, which is a FANTASTIC knife, IMHO.

But...like a bonehead, when cleaning it after owning it about 3 days, I accidentally grabbed the dishwasher with the Scotch-Brite surface, & scratched both sides of the blade.

Any idea as to what grit sandpaper would be good to vanquish these eyesores?

Lots of regular use will do the trick ;).

A) you can try using the same (or a brand new) scotch brite pad and go into the same direction in a very controlled and regular manner. Some fine grit like 500 should do the trick as well, but you have to be just as careful making all strokes in the same direction. The finish might look different than when new though.

But who cares, really? Mine looks like this and its proud of it :). (You can see the two lines where I thinned out the backbevel to <12 deg, edge grind is now around 15 deg, maybe a bit less).

I asked Gene Ingram once what he used. He said, "final finish is a 400 grit water finish. Attach blade to a guide (I use 1/4" thick aluminium bar) that the edge of your finger will follow to keep strokes straight. The guide should be the same or slightly narrower width as the blade. Sit (do not stand) with forearms parallel and level to work surface with near 90 degree angle formed by forearm and upper arm/body. After cleaning the blade with a back and forth motion until only 400 grit scratches remain, start dragging from choil to tip using fresh wet 400 paper. Continue until all scratches are straight. Apply lighter and lighter pressure until finish is acceptable to you. Be critical and analytical of shortcomings, and finesse method for improvement."

I don't know if you have seen his work but its first rate.
