i know..another roll call thread but there hasnt been much said about these lately. I am sure everyone (even the lurkers) have at least 1 spyder folder but i bet alot of you don't have their kitchen knives. Chime up if you have some and what you think of them. I am pretty much set with all mine (see pics below). How is everybody liking the yin/yang set? speaking of which , hey Sal how are they selling? any chance of making a new Santuko out of H1? i started to get a lil bit of rust on mine but i nipped it in the bud and now i dry it before putting it in the wood block. Some of the :spyder: FB's are pretty good on the kitchen too, the temperance i had just scared my wife too much..lol so it has been put away for a bit plus i am out of slots in my block.

Of course I keep a full complement of Spyderco kitchen knives in my batterie de cuisine. :D Why carry fantastic knives around all day and then use junk knives in the kitchen?
The Spyderco Santoku is probably the single most-used knife in the house, period.

Hannibal - I hear you! The Santoku and the later model "The Homemaker" are the most versatile knives in our kitchen! In addition to the Yin&Yang set, I also like using a custom Fred Carter chefknife. It is made of ATS-34 and cuts like a dream because of it's concave grind.

The K08 Santoku is my favorite kitchen knife. I use it for virtually every cutting task and have gotten really comfortable with it. But it has recently been "borrowed" by a friend who is loving it! After scouring the internet to find them one, I am noticing they are all but gone. Anyone know a place I can score a new one?

Call me a Yangmanic. Love the Yang, it gets more daily use than any of my folders. It also happens to smack down all my fancy Henckels kitchen cutlery on a regular basis, with its VG-10 blade. Yang is also moving into first place as my "gift knife" because most people appreciate a fine kitchen knife, even if they don't carry and are NKPs.

Think I posted this once before in Off-Topic, showing off the rack, but here are all mine, except for the parer, plus a couple other Spydies that live in my kitchen.

Among the "real" kitchen knives that I have, my favorite is the K08 Santoku, but I think that's only because I've not yet been lucky enough to track down a K05 PE. The most used is probably the Perrin Street Bowie.
Have not tried the Yang, and probably won't unless they make a 4" version of it, since my K04 6" Utility works fine.

I bought the Ying & Yang as gifts for my mom and she really likes them. I love how light they are and the VG10 works great.
I have KO4, KO5 and Yang. I am using them all the time. Great knives.
After I bought Yang, my wife stopped to use our Henkel set because Yang is much more superior to them. She didn't like serrated blades, but lately she started to use them more and more.
I wish to get 4" plain edge utility, bread and chef's knives from Spyderco with VG10 or H1. :p :p :p

Right now I am using two Shuns and a Wusthof but I plan to try a couple Spyderco's soon. Quality kitche knive make cooking much more enjoyable.

I have the Yin and Yang, and love them both. The yang gets the most use, because it can handle most anything in the kitchen. The one thing I find cool, is that my girfriend can't help but use them. She's never really understood the whole "good knife" thing, but then she tried the yang for dicing up some stuff. She uses it regularly now. I get a little less crap for buying more folders now, as she has a greater appreciation for a good knives :)

Ditto, ditto, ditto. Particularly a 4" or 3" VG-10 or H1 paring knife, which would see an insane amount of use in my kitchen.

Let's see, Santoku, 2 K05 utility knives, 1 very special K04 I used for my wedding cake, a paring knife, Homemaker and the Yin Yang set, yep I got a few. I like the Homemaker best, my wife prefers the Yin Yang set. I'd like to see a homemaker with a sharp point and a 5 inch blade, not that I need it, heck the Yin Yang set handles anything you'd 'need, but nice broad 5 inch blade with a point would 'feel' just right in my mitts in the Kitchen.

I got my girlfriend the 4.5" SE utility knife in mbs-26 as a gift last year, she loves it! she doesn't use any other knife and uses it for EVERYTHING :D
I'll get her another one soon :cool:

Well, I use my PE salt 1 for most everything in the kitchen, it handles slicing very well with its "mostly flat" grind that it has now :D
As for an actual kitchen model, I have yet to get one, but they are definately on my list.

I have the Yin and Yang but all I use in the kitchen for just about everything is the Santuko, since getting one many years ago at the NY blade show from the Spyderco table the wife and I have never felt a need to use any other kitchen knife best $50 bucks I ever spent. I bought another one a couple of months ago but still have not put it thru it's paces.....Doc:D

I have most of the older Spyderco kitchen knives. I missed out on the pairer, but have most of the others.
I use the Santoku the most. I don't like the texturing on the otherwise nicely shaped handles as they are hard to keep clean. My other knives see little use.
I have given the Yin/Yang set away as gifts and a Santoku as well. They have all been well received and forced quite a few more expensive knives into retirement:D I'm not a fan of the size of the Yin/Yang so I don't have my own set:o
What I'm hoping for from Spyderco is a new run of the Homemaker, preferably with a bit more point. I'd love a handle in micarta or wood.
Of and please laser a :spyder: on the knives in the future, I really miss it on my kitchen knives;)

the homemaker is one of the kitchen knives that i wanted but could not locate.:( whichever new spydie kitchen knife that comes out i just would like a black handle to match the other ones i already have, it can have a different material handle, i would just like the color the same. That is the big reason i didnt buy the yang, i already have enough serrated edges so i don't need the yin.

Same here. I would love a Santoku. I wish Spyderco didn't discontinue so many knives, especially the kitchen knives. I became Spyderco enlightened a couple of years ago, but until fairly recently, had no idea they made kitchen knives. Haven't been able to find the Santoku for sale anywhere.:(

I prefer the K05 SE's. My wife likes the K05 PE (could never find another once I knew she liked it). I have a Santouku, but rarely use it. I also have the yin/yang set and a K04. I prefer the length of the K05 over the yin/yang. Once I realized that the K05's would be gone I cleaned out JFJ to have some to give to my kids (and a couple more for me too :)

From the experience of those who have many of the other knives (especially the Pro Culinaire series) in your experience, where has the best place been to find them? Did you buy them while they were still in production? Do the turn up with some regularity on eBay? I'd love to find a few more models to fill out my set for the kitchen.

I'm a recent convert to sharp knives and especially :spyder: blades. I've been looking at replacing our 10 year old cheapish kitchen knives as some are starting to really bug the living hell out of me. I generally steel them everyday before and after use. And use an EzeLap fine diamond benchstone on them once a month to keep them keen.
My wife abuses kitchen knives like you wouldn't believe. She generally prefers the large bread knife and the smaller serrated slicer for her kitchen tasks. I prefer the PE blades I have including a heavy cleaver.
Been eyeing off the Deacon's kitchen sharps for some time now :D ;) and with this thread I have come to the conclusion that my wife needs her first :spyder: to be a kitchen FB. Then will progressively shock her by showing her my collection (shhhh, she thinks I have 3 or 4;) ).
Are these dishwasher proof ? The Minister of War will drop our kitchen knives into the dishwasher on a regular basis and if I don't rescue them they end up gettnig cleaned that way :eek:
The Suntoku, Chefs knife and the small utility knife and the Yin/ Yang combo look to be the ones to get.

dont put them in the dishwasher...i asked if i could do that once i got them and it is a big no no...they could handle it but one the detergent is pretty harsh and two they will get dinged up really bad even with the knife slot on some of the dishwashers.

diswasher is bad, bad, bad idea. Also do not use glass or ceramic cutting boards, only plastic or even better treated hard wood boards.

I agree with everyone who's said that the Santoku is their most-used kitchen knife. It's pleasure for cutting and the broad blade is great for sideways use as a spatula for sliding food off the cutting board. I also have a parer and a 6" SE. I made a run to the local farmers market last weekend and used the 6-incher to breeze through a few pounds of tomatoes to make a fresh tomato sauce--it's easily the best tomato slicer I've ever used.

I use Yang daily for almost six months. It quickly became one and only one knife used around the kitchen.
Very soon my wife began to like Yang so much that we almost got to the point when she would say "I got it first, find something else". So I found Yin. Now we use both knives for anything that has to be cut: cheese, vegetables, fruits, watermelon, etc.
We are not using granite countertop as a cutting board :p and usually hand wash both knives after use. Due to the toughness of VG10 and proper care both Yin and Yang stay sharp insanely long. From now on I would never buy anything less than VG10 for the kitchen!
If only Spyderco can come up with some kind of longer blade (8" or so) made of the same steel...
I am not a big fan of cooking, but grilling vegetables for dinner was an excuse to play with knives and a camera. Here are the stages of the process documented in chronological order. It took less than an hour from start to finish.

Anybody have a lead on a K04P (plain edge utility) with the black handle? I've been able to find the rest of the Pro Culinaire line (except for the K06 and K07) but this one still eludes me! :o

I have one of the filet knives, I like that it has a fairly large handle on it. The handle is about the size of the Santoku's.
Speaking of the Santoku's, have you ever seen one with a lavender colored handle?

We have the Yin & Yang, a Perrin Street Bowie, a SE Temperance and a Maddox up on the wall magnets (along with an assortment of Henkel, Global chefs and a "Swiss Army" parer).
I just used the Perrin this morning to slice up keilbasa and ginger for some fried rice for breakfast. :)

sorry for the delay, i believe its henkels...i had to alter it with a sawzall to make a slot big enough for the santoku.
