Flat or Hollow grind? Which one is better for everyday use? Also, out of the two, which on is easiest to sharpen?
In the land of knives, Spyderco is king.
I find that the hollow grind is very good for shallow cuts like string and paper, but I find flat ground is better for deep cuts like cardboard and meat.
If you use the Sharpmaker 204 they are identical to sharpen.

hollow grind is good for shallow
flat is better for the big stuff
Although, a small flat grind blade can be just as effective for precise small cutting tasks.
Agreed on the 204 sharpener. It makes everything so much sharper!

Both hold a good edge, but if I may throw out another difference. 10 years down the road when your knife is beaten up, it will be easier to sharpen the flat grind. This is because the bevel doesn't "fatten up" as quickly as a hollow grind does. Just another pointer to ponder on. <img src="wink.gif" width=15 height=15 align=middle>

Flat grind is also stronger.
