If you were a scientist, and you happened upon 45 million year old yeast in some amber, you would do the same, right?

I'm sure many of you have heard of this brand, but it is still VERY small and only really in northern California I think.
Anyways, I think it is an incredible concept, and would love to taste the difference between this ancient strain and modern yeasts.
