I believe the real question is: how does the Peter Martin pizza cutter edge hold up during rigorous pizza cutting? Would ZDP-189, M4 or CTS-XHP offer superior edge retention over prolonged use? How many extra large, meat lovers pizzas would I be able to cut through before needing to resharpen?;)
I would probably re-profile the edge to 15 degrees inclusive and strop it with some 2400 grit paste for an edge that really cuts through the super-thick crust with extra cheese. Or maybe I'd send it in for a Krein regrind. Is there a pizza-cutter setting on the sharpmaker?:p
My perfect pizza cutter would be Ed Schempp designed, using Taiwan-style carbon fiber on a Ti frame. The wheel would use Damasteel's Hakkapella, with a Spydie-hole of course. It would also be made in Golden, CO USA Earth.

thought that was supposed to be all there was on pizza...
sauce (tomato paste, garlic, some oregano) , cheese (fresh mozza) , tomatoes (roma), basil, and sausage of choice (I'm a fan of calabrese)
nice thin crust and it cooks quickly.
Don't know who decided that 2" thick vern's was a good choice.

BTW I just realized no-one local did a plug here for 'Beau-Jo's Original Mountain Pie Pizzeria just 30 minutes up the I-70 canyon from Golden... an' all the Honey you want for those rapidly accumulating giganti-normous pizza crusts. ;)
There's spinoff's, but IMO only ONE REAL DEAL...
