I ran across a couple of interesting "case hardened" steels by QuesTek-- I don't know if they have any application for knifemaking, but they may have some use for things like swords or large "camp" knives used for heavy-duty chopping.
Anyway, this case carburized stainless steel "Ferrium CS62" has a high toughness core at HRC 50, but with high case hardness of HRC 62. (It made me think of the differential tempering of traditional nihon-to.)
They have other "Ferrium" alloys, but I'm not sure if they are stainless. Anyway, here is their url:
