View Full Version : how do you sharpen your knives?

I just recently aquired a sharpmaker, and it does faily well on my forschner knife, which I use for meatcutting. (I am a meatcutter by trade). however, It does a lousy job on my moms old homestead kitchen knives. still awaiting my delica lightweight, but have reservations about it, because I had hoped it would replace my trusty 69 cent boxcutter, which I use all day, every day, in the grocery business to open boxes. does spyderco make a good knife for the meatcuter that would replace my forshchner knife? most meatcutters own forshners.

I dunno what kind of knife a forshchner is specifically. But have you checked out the kitchen knives in Spyderco's line?? To me the Santoku looks to be a meat cutter <img src="smile.gif" width=15 height=15 align=middle border=0>

Spyderco's sharpener will sharpen anything, but if the bevel on the blade is radically different, the sharpener will spend a LONG time removing metal without reaching the edge. Some manufacturers recommend a certain type of sharpener. Have you asked the maker of your knives?

If those knives are quite worn, a rebevel may be in order. Try sharpening them at 30 degrees using a coarse stone leaned against a sharpmaker stick, then going through the sharpmaker process at 30.

A final run at 40 should have them hair-popping sharp!

agreed with S&amp;S! Give your mom's knife a 30&#176; back-bevel and work on the blade later with the 40&#176;.. you can't go wrong with the Sharpmaker! <img src="spyder.gif" width=15 height=15 align=middle border=0><img src="smile.gif" width=15 height=15 align=middle border=0><img src="spyder.gif" width=15 height=15 align=middle border=0>

With the MF 204 <img src="smile.gif" width=15 height=15 align=middle border=0>

Haven't figured out how to reliably lean a stone up against the Sharpmaker. How do you do that - safely and securely?

Two words, Chuck- Rubber. Band. Only works on small stones, but I've a pocket stone that works great for this.

Reprofiling by hand also works, as long as the angle is lesser than the 204 angle of choice.

Keepin' it real...real sharp, that is.
